I am also considering the option of removing the Jarls and leaving the Earls – but then I need to find some fire giants to replace the Jarls (I haven't found any yet).

Einherjar – fits the lore, although the name is quite peculiar.
P.S. I looked it up, bears are the "base," and Landsknechts are the champions, lol – are they like plush bears?

This was about the dragon.
Einherii seem to be the servants of the Aesir, if I'm not mistaken. The idea doesn't really work, and the name is indeed too elaborate. Hammers of Fate are more like the weapons wielded by our Tier 6 unit.
Another option:
Cool guys - cool fiery guys - cool lightning-fast guys.

It is indeed absurd that Landsknechts are champions, and bears are... well, if we consider it absolutely, they don't belong in the core roster, but if we consider it relatively, compared to those who are in the elite of the Heroes 7 dwarves, then the bears are clearly weaker than them and therefore lower in tier. In the elite, there are rhinoceroses, priests, and valkyries – the first is stronger than the bears because it is a lava rhinoceros, and the last two are stronger than the bears for magical reasons.

What about Tany/Einherjar/Turs?
I don't like the abstract Turs in the alternate version; I've already explained why – it looks more like a General name for the branch, like Giants, and therefore it makes the most sense in the base game.
Ideally, the bear is stronger than the wolf and should be higher level...

Knights/Griffins: 6 to 1 against a dragon.
Bears: 8 to 1 (if without Riders, it would be 10 to 1).
Tigers/Lions (if they existed): 12-15 to 1; in the game, Cerberuses are closest to them in terms of weight category (14 to 1).
Wolves: 30 to 1 (before reinforcements are summoned) and 45 to 1 if looking individually.
Lancers (elite heavy infantry): 15 to 1. This is practically the limit for human infantry; there's nothing more elite (we don't have Landsknechts, and even if we did, they wouldn't be stronger than Lancers).
Crossbowmen: 24 to 1.
Militia: 40 to 1 (upgraded) and 60 to 1 (base, individually, after reinforcements are summoned). The models are not "puffy" but more combat-oriented (closer to spearmen/halberdiers from Heroes 3).
Standard peasants (if they existed): somewhere around 100 to 1.
I completely agree about the Cyclops. Such a giant would simply crush a slender and elegant Twilight Dragon.
In the original game, the developers didn't care about infantry; they leveled everyone's power (initiative * damage * survivability), regardless of speed (which wasn't even taken into account in the Power calculation).
And I was wondering all along.

1) Should "Critical Strike" be renamed to "Elven Luck"?
2) Should "Ethereal Luck" be renamed to "Dwarven Luck"?

Pillage + penalty -1 to the enemy hero's speed in battle
Uncover Secrets -> Eagle Eye
Communications -> Efficiency (+1 to initiative)
Dark Weakness -> Weakness of Darkness
Bestowing Wrath -> Righteous Wrath
Endurance -> Master of Strength (+1 to all stats for each point in Strength)
Secrets of the Voice -> Voice Training (originally: Developing a Shout, confusion with a skill)
Questionable:
Witch's Reward -> Master of Magic?
Graduate -> Master of Knowledge?
(because the skills give +2 for each point in a specific school of magic, i.e., key skills for leveling up several schools of magic).
