There's a chance the Mafia weren't targeting Snegovik, which means they've figured out who Eragon is. Regardless of who Olam turns out to be, the only viable plan for tonight is: 1) Oromis and Arya block the suspected Mafia members (Alex, Ment, Nefela, Lorelei). 2) Glaedr protects Eragon, since Snegovik couldn't. 3) Eragon deals with Tox.
