the most dangerous griffons belong to Iris...

regarding Battle Griffons... I agree. They are good in defense

upgrade Readiness and Counterattack for Iris... Battle Griffons become simply monsters...
(as do Royal Griffons, by the way)

the trick with Battle Griffons is Battle Frenzy... the more you hit them, the stronger their counterattack (each subsequent counterattack is 1.5 times stronger than the previous one... and so on until their turn comes)

I only use Combat units for defense, for example: when defending a castle, and I use Royal units for attack.
For example, if you place Combat units at the gates of your castle and frequently resurrect them, your castle won't be taken (although it all depends on the army and spells).
Battle griffons are very effective against vampires, especially if you buff them further and cast Watchful. They respond to all attacks, becoming stronger each time, and also heal well, while the hero immediately punishes the attackers. But this is good against melee units; ranged units need to be countered.
A living opponent just points at the griffins, and that's it.
It seems you haven't fought much against these "monsters."
And don't forget... it takes them a while to reach the archers... it's like a "senior" jumping.
And I don't like poking them... either we avoid the battle, or we kill them in one hit.

Well... things are easier with humans than with the Inferno, and much more difficult...
Usually, my setup is like this:
Level 1: cannon fodder (randomly, but more often militia, because the stunning attack is useful)
Level 2: usually archers (because, out of habit from fighting the Inferno, I prefer attack over solid defense)
Level 3: it depends... usually, whatever is missing (attack/defense)
Level 4: royal... I still have the old habit of using griffins to eliminate neutral creatures (on the principle... almost like using hunting hounds)
Level 5: almost doesn't matter
Level 6: usually Knights of Isabel, paladins only if the enemy has a berserker or something similar
Level 7: archangels... they have constant damage, and resurrection is very useful.
Level 1: Landlords
Level 2: Archers
Level 3: Zealots (the cleaver is very useful)
Level 4: Royal Griffins
Level 5: Adepts
Level 6: Knights of Isabel
Level 7: Archangels
2. Archers.
3. Zealots.
4. Royal Griffons.
5. Inquisitors.
6. When the opponent has a lot of Darkness creatures, use Paladins. In other cases, use Knights of Isabel.
7. Archangels, in some cases Seraphs.
