Mighty Gorgons. Simply superb fighters. They have a bit less health, but this is compensated by high defense. And how effectively they crush monsters of levels 6 and 7? When fighting them, you should be wary and protect your units of levels 6 and 7, otherwise they will fall like "breadcrumbs."
I also want to mention the Thunderbird. If it manages to strike with lightning, it will be quite painful. But it's not quite what I'm looking for.
I'll also mention Dendroids - they reproduce better for their level, and they are also very strong and resilient, but... they are incredibly slow. They would be excellent warriors if their speed could be increased. As it is, they are not quite right.
Still, my vote goes to the Mighty Gorgons.

I don't know about the Thunderbirds, but when I face powerful Gorgons (especially in large numbers), I move my level 7+ units as far away as possible. It would be a shame if the Gorgons dealt, say, 200 damage to Azure Dragons and killed two of them instantly.

In the early stages of the game, the most useful and effective units are the Rock Golems (although you might not have enough resources to upgrade them). Minotaurs join the battle a little later, or at the same time as the Rock Golems, but they are supported by the Eyeballs, so Minotaurs are very important as reinforcements.
In general, Gorgons are undoubtedly the strongest Tier 5 unit, but that doesn't necessarily mean they are the best.
There are no replacements for Birds and Minotaurs in terms of their roles, and in terms of power, Gorgons are ahead of the rest.
