I think the more, the better. Ideally, it would be around 10-12 different factions. Although, I don't think that would increase the interest in 5 Heroes...

What if there are 20 or 30 of them? Would the interest increase with each new faction?
Well, we shouldn't go to extremes... but if these 30 factions are significantly different from each other (i.e., not just a simple copy-paste), then why not? I think it would be enjoyable to browse through them all, compare them, and so on. :D

Yes, if the factions are very different from each other, in my opinion, the ideal ratio would be 4 good, 4 evil, and 4 neutral factions – a total of 12. In addition to the differences, all good/evil/neutral factions will have their own similarities, besides the ideological ones.
There should always be a choice and a unique aspect to the game. Having several races in the game adds a unique intrigue! The desire to explore each race: their combat tactics, magic, hero characteristics, units! The specifics of playing as and against that race! After all, there are many peoples in the world, so why should the world of Heroes be limited to only 6 races? But, of course, there should also be a certain limit! No more than 20! And ideally, even fewer! But I would rework the individual units in each race. But that's not the topic of this discussion.
It is difficult to specify the exact, optimal number of races in my opinion, but their diversity, while maintaining balance, will certainly add interest to the game!

In my opinion, when it comes to the number of factions, there are two paths... let's consider them with examples...
First: Games like Age of Wonders, with 12 factions in the first part, then 16+. The balance is non-existent, but people play it because of the variety, the partial uniqueness of each faction, and so on. Currently, the game is dead and only a few fans remember it...
Second: The game Starcraft - there are THREE factions. The balance is almost perfect, and the factions are ABSOLUTELY different. It participates in all esports competitions in the world. In Korea, it has become a religion. Even after NINE years since its release, it remains the BEST strategy game.
Personally, for me, balance and uniqueness are better than a multitude of pseudo-different factions.
