It's not interesting when a town has many creatures that are similar in concept. And instead of a bunch of peasants, you could add something else. Cows, for example. You also need to consider that it's a fantasy village, so it could also be inhabited by specific creatures. You could include not only people, but also representatives of other nationalities (like a dwarven miner, for example. He's also a villager).
