I prefer river fish, despite the large number of bones. It has a more pleasant and delicate taste.
I agree. Sea fish is quite specific; if you don't cook it properly (and it's often not cooked properly), it can be very bitter. But it's difficult to spoil river fish, and a culinary masterpiece is often even more of a masterpiece.
