Are you talking about those people who go hunting, kill an animal, and then don't throw the carcass in the trash/don't send it to be processed for fur, but instead, do what's appropriate, and eat it? I don't see anything strange about that.
The fish you catch is not like the herring in the nearest store; it's a completely different taste experience. I suspect the same is true for game. The satisfaction of the hunter's instinct is also important, I agree, but when you consume what you've caught, that's when you get the maximum enjoyment. You need to go through the whole process.
