Behemoth is a real beast!
I have a memory of playing as Fortress on the map "The Lord of War." I cloned 4800 behemoths and tore everyone apart. That was some incredible damage...
When attacking an enemy castle, Cyclops can destroy walls. So, it makes sense to separate their troops.
You can put a regular warrior from another castle in their place.

The Stronghold is a pretty good Castle. Its advantages include a low price for units and good growth. This city is more convenient for playing for a quick victory, as development here takes place almost without problems. I consider the weak magic to be a disadvantage; besides that, I don't see anything that stands out. There are good heroes here – Battle Mages and Barbarians. For starters, I personally choose Dessa; she has Logistics, which is especially valuable at the beginning of the game. Then, I try to upgrade the birds during the first week, and then I follow a well-established scheme, building either Cyclops or Ogres, and then go into battle!
What difficulty level do you play on?
I don't quite agree with building Rocs in the first week... it's usually tight on money, and it slows down the economy a lot (except in cases where there is a rich territory and many weak guards).
Although, if the guards are weak, there is no problem defeating them with Goblins and Orcs (three Rocs won't make a difference)...
but spending an extra day and money...
Destroying walls is useful, but it takes up an extra slot for your army.

That's a bit much, but you can split them up.
I recommend playing this map. All the slots are already occupied by at least strong units.

Usually, towers shoot at goblins, so you can take them. I always have dogs in my army. Also, orcs, as they are archers. Ogres, birds, and hippos are also in the army. And the last slot is for cyclops (but I don't always take them, as they require a lot of crystals to build). So, there are almost never empty slots.
By the way, in The Succession Wars, you can split up warriors directly in battle. It's convenient, and such problems don't arise.
