Seriously, I didn't call them that, but it was like:

Ents - stumps
Gnomes - shorties
Vampires - vamps or ghouls
Knight - lumberjack
3rd hero
Hobbits - half-shorties
Horned demons - horn-bearers

Of course, I don't always refer to them like that:

Earth elementals - poop
Vampire recruiter - vampire den
Assembled armor of the dead knight (who casts spells on everyone at the beginning) - sh*t-armor

Ugh, I could write about this forever, but here are the most common ones:
Guardians/Specters - old women, zombies - rotters, liches - spellcasters, griffins, monks/fanatics, ents, centaurs - captains, unicorns (basically just horses), gremlins, golems, imps/devils, ogres, dogs, goats, pits, arch-devils (also, but less often, angels), blind ones - troglodytes, harpies (I'd call them something else), eyes, mantises/scorpions, wolves - raiders, orcs, birds, hippos - monsters, gnolls - marauders, flies - snakes/dragonflies, Vasya, cows, virns, fairies, elementals of water - unupgraded, elementals of earth/magma, elementals of magic (UPGRADED), fairies, peasants, rogues, nomads, boars, snipers, Santa gremlins - Father Frost, sylvans - sylvan centaurs, ravens - sorceresses, cyclists (I don't know why, but I've been calling them that for a long time, or botanists) - fairy dragons, knights - nightmares, and by the way, dreads - dread knights (knights of terror), azures - Lords of Darkness, I think that's all. Artifacts are just called "tifas" =)). Some heroes are funny, especially the elementals (Erdamon and Lakus). Tantus is cute, Solmyr is... well, you know =). Deemer is a bull (but he's the only one who's really annoying), and Claudius is a doofus. That's enough for now

plague zombies - plague zombies (pronounced very affectionately;))
lumber mill - lumber mill (a friend "taught" me, and now I can't stop)
hydras and dragons - hydrash and dragonsh (again, very gently and affectionately, because I love these cute creatures; they are so cool when they rejoice after winning a battle in Heroes V, such a roar)
