Dealing damage yes, knocking him out of stealth no.

But can't you move somewhere after stealth? I think assassins in the Obelisks left their location, if I remember correctly...

You can do things that don't affect the environment while invisible, including moving around.

No, I mean, does going into stealth immediately end your turn, or can you take a few steps to the side so the enemy doesn't know where you currently are?

Sure, it doesn't require skipping a turn, and it's not a ranged attack or spell.

Yes. You can also buff yourself, but not allies.
