Yes, you can easily defeat computer opponents with just one hero; reach level 15, and you can use a single hero to destroy the computer's army, thanks to magic, for example. Although, if you play on a higher difficulty, it will be more challenging. Life magic is good for support, but it's difficult to play with just one hero.
