The "Guardian Angel" skill doesn't turn a Knight into an angel; the skill's logic is different, and race isn't a factor here.

Epic. For "SU" races, race isn't a factor. "SU" stands for "super skill." "Skill" is the ability to do something, based on knowledge, experience, or proficiency. And the "resurrection" skill is the prerogative of angels. Magic is more of a ~gift than a skill.
