I deliberately didn't level up; in a normal playthrough, I finished both characters at level 50, although the second one is slowly creeping higher because I'm trying to level him up more evenly, developing everything I can, instead of just one or two skills, like with the cat. He's a mage, an archer, and now he's learning to wield a sword, and he has decent stealth, but his thievery skills are lacking because I don't want to engage in thievery.

Well, I'm a jack-of-all-trades. I also engaged in thievery to achieve the status of King of Thieves, and I maxed out all branches of magic as an archmage (only constantly declaring illusion as legendary), and I'm a professional archer with stealth (which, by the way, was the first thing I started leveling up), and I craft powerful gear (taking into account potions made thanks to maxing out alchemy and the special properties of gear for this skill), and I'm good with swords, and I maxed out both types of armor, and I got married, ended the war with peaceful advice, and became the leader everywhere (except for the Bard's Guild, but the Dragonborn doesn't waste time on that). In short, I have well-rounded development in the game; I only didn't level up the shield. Because the shield is useless.
