Or are you saying that if an opponent fights against you, you should do the same to them? Then why not drink vampire blood? Why not betray allies by using them and then throwing them in a dungeon (like the Necromancers did to Sandro in the Dungeon)? Why not eat the fresh corpses of defeated enemies? Why not turn enemies into skeletons?

In short, you're wrong, because Knights are different from vagrants and mercenaries in that they follow the Code, and if they start ignoring the Code, then what kind of Knights are they?
They are not Knights; they just call themselves that. They are hunters and adventurers, perhaps with the exception of Stormlance
