In your opinion, which primary stat is the best?

There is no best primary stat. It depends on each individual. Dungeon focuses on magic and attack, defense isn't needed for Dungeon creatures. But humans happily boost both defense and attack, but they lack magic (except for Axel the botanist, who boosts knowledge faster than attack/defense).
P.S. You might as well ask what's better: ore or wood?;)
