If a wide passage is specified in the template, it will be wide, even if it's 2 cells/2 guards wide; I know that.
But if a regular passage is specified, I thought it couldn't become wide/multiple; am I wrong?

A wide passage is a passage without guards and can also be formed through a teleport. So, its width is a relative concept.
In practice, a regular passage often forms as a multiple passage – several guards appear instead of one.
