PS I don't understand how it's possible for red to choose both the faction and the map, as well as the color.

Blue chooses the castle and the map template... The player higher in the seeding order only chooses the starting color; this has been discussed in the thread several times. If the player higher in the seeding order chooses red, then blue chooses the castles and map templates.
