Either Twitch is glitching, or there's something else that's hidden from the "average" user.

To prevent them from disappearing completely, you can play it safe and create highlights. You can upload them to YouTube (with one click) or simply store them on Twitch. If needed, I can explain the process. But it's all very simple.
