I don't quite understand the point of pausing. You can pass your turn and go about your business; time doesn't run until the turn is accepted.
If the game time is reduced to 2-4 hours (which, in my opinion, would be great), it will be possible to play the game in one sitting without breaks, but with such a time limit, you'll have to think a lot during your opponent's turn, and it's not very good to waste even their turn time on this. That's one thing. Secondly, I think it would be more polite to let your opponent know that you're stepping away. Hearing about a cup of coffee, they might suddenly realize that they want one too.
