To be honest, I wasn't very successful. I tried placing them by editing the map in a text editor, but then the game refused to start. For it to work 100%, the mod needs to be embedded in the map.

We take a hero, in the object's properties tree, we select "Shared" and click on "...".
In the right part of the newly opened window, we are interested in the HeroCharacterArena and HeroCharacterAdventure properties. For each of them, we click on "..." and select the Minotaur (Characters\Creatures\Dungeon). We don't rush to close the window: the Minotaur lacks animations that heroes should have. We select ArenaAnimSet and click on "...". For complete happiness, it lacks buff, cast, defeat, and victory animations. We right-click on animations, add in the opened menu, in the kind field, we write the name of the animation that we don't have, and in the Anim property, we copy the value of this property from some other animation (to taste). That's basically it. The only problem is the melee attack, because our Minotaur, in theory, cannot shoot. Unfortunately, standard creature animations are not suitable for melee attacks, so I can only suggest adding rangeattack to the list of animations above for shooting.
I tried to do it as you said: I took a hero (Demon Lord) and assigned him the Archdevil model. I configured all the animations, including rangeattack to replace melee - I took it from the Succubus. Everything is fine, except for one thing: the hero doesn't shoot fire, but a small blue bar. Is there a setting for this animation somewhere? I looked in the properties of the Succubus itself - I didn't find anything special, and, as I understand it, the animations configured in the arena describe only the behavior of the character itself, and not what happens as a result.
