I suggest holding the tournament on the original or tournament version.
The maps are definitely not fixed. You can use the built-in generator (although I don't like this option). It's better to use IRMG or, at worst, play on a fan-made map.
We will think about the tournament scheme based on the number of potential participants and their skill level.
I can take on the organization and judging (I have enough experience).
