How can I transfer Catherine's portrait from the original three heroes into the complete edition (the portraits are different)?

Unfortunately, it's not possible! If you want to see the "old" portrait, play the "old" version of "Heroes"!
In Heroes of Might and Magic, you can change portraits if you know how.
