What prevents you from setting an exact date? You could prepare a post about the Mafia game in advance, write everything out, upload the images (if any), then copy it into a document and copy all of that into the thread on the specified day. That way, there would definitely be no hassle, no one would have to write in private messages, there would be no need to write down numbers on a piece of paper, calculate the number of players, make plans, and deal with all that other nonsense. And again, you said you would post the game setup when the game starts, and during that time, people could comment on its changes, add to it, etc. But if people sign up in advance, will there be time for that? The night will start right away.

Someone might not have time to sign up and will be upset.
