Three! I've always been a fan and will remain one – just wait until Heroes 6 comes out:)
The fifth game is inconsistent. I like Inferno. But the Tower was definitely designed after a long period of… well, you get the idea. In general, Heroes 3 and In the Wake of Gods are the best games in the entire Heroes series, and they probably will remain so. And the plot in the fifth game is terrible.
