Village

1) I agree.
2) I disagree: a village can be multinational, as I already said. Otherwise, there won't be enough normal creatures.
3) It's not ideal, but you can substitute it with another animal.

Regarding the jigits, they would fit well in the Stronghold. A dwarf, elf, goblin, or even a Krigan could be suitable for the village, but not a nomad – they are not permanent residents, but travelers.
Instead of the Bull, we'll use the Cat, an improved version of Vasinka.
