I didn't rule out all these possibilities (I wouldn't mind playing as a mercenary myself, even though Jedi appeal to me more), but even if half of the characters are Jedi, wouldn't that be a bit silly? :)

Well, LucasArts probably took this into account – after all, the universe itself is clearly designed for a specific audience, and its uniqueness lies in that... In the new trilogy, most of the main and even secondary characters are Jedi, while various rogues, smugglers, and bounty hunters are just an exotic addition to the story...
For example, the information states that special armor has been developed for the marines, and to use powerful blaster rifles, you need to undergo appropriate military training. Jedi, on the other hand, will not be able to wield heavy rifles, as they were trained to fight with lightsabers and use the Force. Heavy armor will most likely hinder the use of the Force, so Jedi will wear light robes that offer insufficient protection. Snipers with good rifles can definitely take advantage of this – they can shoot down Force users from a distance.
You can probably come up with many more examples of how other classes can be superior to Force users... After all, being a "tank" is still a very common practice...
