Alcohol really does reveal a creature's true nature, often not in the best light, and someone who was once reasonable in our eyes can become far from the most pleasant type after consuming a moderate amount of alcohol (and I'm not even talking about large quantities, because then anyone will start to lose self-control).
The definition of a creature's sanity also depends on our ideas about sanity, so it turns out that there is no objective measure.
