Don't forget about slowing. You can and should use Berserk. As for who to use it on, that depends on the situation. I think Blind is useful. Of course, Conflux and Tower are strong against undead. But if the Necromancer has the King's Robe and Cursed Armor (which is quite easy to get on large maps), then it's a tough fight...
Humans have an advantage when playing against Necromancers: diplomacy + leadership. I've experienced it firsthand. When 500 griffins join the humans, it's a terrifying thing. And they weren't the only ones.
It's difficult to fight against Undead... But they also have weaknesses; almost half of the beneficial spells don't affect them... Then there's special magic against them, only one archer, and the Dragon is completely useless, so only Vampires and Liches save the undead. But I fight them with the Tower, there are many archers and they are strong, and I use Golems in battle: 1-armor, 2-magic resistance, 3-vampires can't bite them, and of course, magic. Otherwise, they aren't that strong if you fight them skillfully and tactically...

But the iron units are too slow. And against Necromancers, speed plays a very big role. Therefore, it's best to take fast units so that you can end the battle in your first turn. Or inflict decisive damage.
And Dungeon is also effective. Dark Hunters, flying Manticores, Minotaurs with good morale, immune Harpies, and two squads of archers. Plus, doubled mana and the ability to buy back creatures from external dwellings. A very powerful town against Necropolis. But they have little health (except for Dark Hunters) - vampires can seriously damage them. Therefore, the first thing to do is hit the vampires.
Well, if you judge by morale and luck, then Stronghold is also very strong against Necropolis due to its attack power, and the bears that can be sent against vampires and skeletons, and Ogres are very strong on their own!
In my opinion, Castle is also good against Necropolis! When there are many halberdiers and crossbowmen, as well as crusaders and champions, then you can give the undead a beating! Archangels with resurrection also help!
Against Necropolis, Stronghold and Tower are also good! With the Tower, I used archers, nagas, and golems to slaughter the undead, and with Stronghold, I took them with numbers and strength!

I usually played against Necropolis with two heroes, the first got undead troops, its main task was to destroy the vampires, then the second hero attacked with striking power.
Losing vampires, even in a winning battle, demoralizes any Necromancer.
