You can only raise vampires by killing creatures of level 3 and 4.
I think vampires are the best. You take 25-30 of them and go around, leveling them up.
For leveling up, even 2 vampires are enough. Then you can use them for anything, even to heat the stove, if you have Necromancy level 5, of course.
