Which faction is the most interesting to play as, and what strategy do you find most engaging?

I wouldn't be so categorical. Especially when it comes to fighting initiative-based creatures, Ents are very effective, especially if it's an ancient Ent and the enemy is foolish enough to attack it.

I often encountered situations where the enemy only had Ents left. In these cases, the initiative-based creatures managed to move 2 or even 3 times more often than the Ent. Also, the hero would often attack the Ent. Usually, these battles lasted a long time and were tedious, but in the end, the Ent would still win (if the strength of the armies on both sides was approximately equal).
