The choice falls on those who can eliminate the undead in the shortest possible time (directly during the battle) so that they have less time to cast spells. In principle, dwarves with speed and an energy rune can handle this task quite well. Plus, light, which will counter possible darkness with a bit of luck. And... it's not that easy for a light elf to actually use light in the game; there's a bug.
