Uh... I usually play all the notable games, although there are exceptions. I've never played any of the Command & Conquer games, starting with the second installment. I remember playing Tiberian Sun a long time ago, but I love Red Alert. World in Conflict also passed me by, unfortunately, and I still haven't bought Sam & Max, as other games keep coming out. But I'll definitely get Sam & Max; it's a mega-quest.
I doubt I'll miss out on any more or less notable RPGs or good Diablo-clones (Hellgate, Titan Quest, Legends, Sacred) because they're replayable, so when there's nothing interesting, I replay them. Right now, I'm playing The Witcher and Oblivion again.
What else... I often go back to Crusader Kings, but also to Heroes, and Disciples. As for action games, I'm not sure; I usually play through them once and rarely go back. COD4 and Kane & Lynch are better in this genre, in my opinion. Although I do replay some, like Half-Life, and I still actively play Portal; luckily, there are always interesting maps for it.
What else... Civilization, Warhammer, StarCraft, Warcraft, Sins of a Solar Empire (I don't mind switching to English for such a game), SimCity 4.
But in general, I prefer playing new games rather than replaying old ones, although this doesn't apply to strategy games.
