Which Castle do you prefer to play as?

I think it's always best to START with a Castle – as it's the most balanced option. Then, depending on the map's features, the number and type of captured towns, you can decide whether to continue developing an army with archangels (by cloning them with an expert Water Magic spell and resurrecting the slain units again and again, including the archangels themselves) or, for example, focus on increasing the number of skeletons and liches (using the Necromancer expert skill).
