How do you kill a summoned phoenix?

And which phoenix are we talking about? If it's a summoned one, then Necropolis with its Undead creatures would be the best choice:). If it's a neutral creature, then defend the archers while attacking the phoenix itself (if you have a cold-slowing spell, cast it on the phoenix to slow it down).
