If you want to stay in the Castle and defend, you can destroy the catapult before it breaks through the wall or gate. However, the enemy might escape.

And it can also shoot, fly, use magic with the hero and units, cause an earthquake, and so on. It's not that simple here either... sometimes it's not even worth bothering with a catapult.
