Which creatures are not used in the game?

I have 2 questions. First, which creatures are not used in the game other than SNOW_APE (Yeti) and BLACK_KNIGHT (Black Knights)? And second, how do I make a creature spawn on the map? And a third question that you don't necessarily have to answer: what do vampires shout upon victory?
If all others except the yeti and black knight are used in the game, then how can the maximum number of creatures be increased from 179 to 180?
