Gargoyles were certainly more formidable in the third game, but we should remember that they are just animated decorations for the parapet, and they can certainly be like the ones in the fifth game.
In the third game, they were also small, and in all the games, they weren't very impressive... but they should be large and strong.
The best gargoyles are in the fourth game.
