And I'm building Rukh and Monster dens in the first week for the Stronghold, and it's already the 3rd week, and all the units are level 50?

Well, that's a bit of an exaggeration! Building Monster dens with 200% bonus in the first week? That means the map has a lot of resources. At best, on a normal map with 200% bonus, you'll be able to build them by day 12-13, but not earlier! Assuming you have 500 gold and a standard amount of resources on the map.
