By the way, I never quite understood why Lorik spent so much time and effort on the horse. Like, couldn't he just hit Gingkink directly? He basically handed Alaria the victory that way, when she figured out to run away and use her knives.

Because Ging has a ton of HP. He would just gallop off to heal beyond the bow's range, then come back. Besides, Alaria would have just thrown a burn on the horse, then gone into the shadows, and then switched to daggers.
