That's a good question, but I think it's not simple and requires a separate discussion. Personally, I don't see a universal solution yet.
But one is needed; otherwise, imagine a situation where, on the last day, all 11 pairs that haven't played in the group stage request a reschedule, and the organizer has to manage and coordinate all 22 players? In my opinion, there should be a clear rule: either both players suggest a convenient time, and if it doesn't match, the organizer schedules the reschedule at the most convenient time for the majority - which would be an evening on the weekend.
