You could also focus on "concentration" instead of "skill," but the question is whether accuracy and parrying are better than evasion and speed.
I think it's worse. Speed theoretically gives you up to two extra attacks per round. Evasion protects you from both ranged attacks and magic. However, I could be wrong.

I was also thinking of putting "concentration" instead of "stamina" as a third option and maxing out dexterity and perception, but then you get a terminator until the first unlucky dice roll.
Yes, I don't really like this option either. Besides, the damage will also decrease a bit, even if the hits will be more consistent. But I decided that a large health pool, resistances, and willpower are more important than accuracy and parrying. But this may be due to my habit of making durable fighters.
