I can't modify values using Artmoney/Cheat Engine in HoMM1. I simply enter the value into the program, in the correct fields. But it doesn't change in the game; instead, it reverts to the original value in the program. Maybe I'm just not skilled enough, but it doesn't seem to work. Question: is it even possible to do this? And if so, how?

It seems you have the demo versions. PS: I haven't tried either of them in Heroes of Might and Magic I, but there are no such problems in Heroes of Might and Magic III and V.
