I see that the opponent (the computer) uses a lot of heroes, while I try to build one castle and leave a guard in it, and then run around the map with my main character... But this way, I don't have time to do anything... And the opponent moves freely around the map (which I can't do, because I have 2 garrisons and one Dungeon around me, which allows them to move outside the garrison's area). FouLu, please be specific: which campaign and which scenario are you referring to? If it's a standard campaign, the solution can be found by reading walkthroughs, for example, see the links on this page: http://heroes.ag.ru/h3/ (after the words "Walkthroughs for standard campaigns").
In general, it's not a good idea to keep your army in the castle to guard it: it's better to gather your troops into a "fist" and move around with them along with your main hero, and return to your castle when needed.
