Do all forms of subjection and stunning fall under this category?
Yes.
Does "they will do anything" mean that this ability essentially works like subjection, but at the end, you still need to give something in return?
Not necessarily, it depends on the character and how the priestess behaves. Some might comply in exchange for promises, while others might try to take what they want by force.

Could you please provide brief patch notes later? Or do I have to reread everything again?

Whatever

I'll write a brief summary later about what I added and what I replaced, but I might miss some small details.

Revan, does Madness work automatically? Meaning, is there a check in every dialogue, and can I not disable it? I have the same questions about Desire; I'm having some doubts.

Just a quick question: are aristocrats considered to be from the Empire by origin? I didn't quite understand which country they belong to.

Revan, does Madness work automatically? Meaning, is there a check immediately in any dialogue; I can't somehow disable it? Same questions regarding Lust, as some doubts have arisen.
Yes.
Before I forget: are aristocrats by origin considered Imperials? Because I didn't quite understand which country they belong to.
Yes.

I added the classes of the island nation I mentioned earlier; I will write about the nation itself later.

Added after 3 minutes
And as for the priestesses, I'll think more in my nightly fantasies, perhaps the passive operation of these skills is not appropriate in all situations.

Please think it over. Otherwise, Arandor will be offended if Halmeldir wants to satisfy his animal instincts.
